EXPLORE RAMADAN BERSAMAMU BUFFET DINING WITH LE MIRIDIEN KOTA KINABALU

This year's Ramadan, Le Meridien Kota Kinabalu is once again ready to be preferred breaking-of-fast venue featuring more than 300 dishes in its Ramadan buffet dinner selections as well cooking stations and delectable dessert.

'Ramadan Bersamamu'or loosely translated as Ramadan is with you, is this year's theme that signifies togetherness of families and friends, rekindling of past relationships and fostering new connections throughout the holy month regardless of race and religion.

Executive chef, Abraham bin Lingkorn (4th from right) with executive sous chef Kelvin Kilin (4th from left), chef de cuisine Bobby Melvin George (3rd from right) and sous chef Gary Gidioen (far left)

Led by the hotel's executive chef, Abraham bin Lingkorn with support and assistance from his executive sous chef Kelvin Kilin, chef de cuisine Bobby Melvin George and sous chef Gary Gidioen, the buffet is a reflection of their combined experiences working in West Malaysia that ultimately a fusion of East and West Malaysian cuisines.

The menu highlights for this year are lemongrass and honey roasted mutton; a creative approach to the traditionally served roasted mutton, northern style herbs spiced meat bone soup that is much loved by the Minang people in Negeri Sembilan, spicy-sour oxtail with torch ginger; a unique combination to bring out the flavours, claypot grilled chicken that is one of a kind in the city during Ramadan, three-flavoured fish and beef cooked with bambangan or wild mangoes that is uniquely endemic to East Malaysia and prawn curry cooked with bird's eye chili and coconut milk.

Another unique feature to the hotel's Ramadan buffet spread is the 'Kedai Runcit Uncle Suresh' that offers a popular yesteryear children game such as the tikam-tikam or the lucky random pick game which gives the children opportunity to win a prize of either toys or snacks.

All food preparations use fresh ingredients that are locally sourced in Sabah as part of the hotel's carbon footprint reduction effort and supply-chain sustainability practice.

"Ramadan is a time for friends and families to get together but it is also an opportunity for our international visitors to be part of the occasion. That is what we are bringing forward in our Ramadan offerings, a culinary exploration of culture through the different cuisines in our buffet spread", said Suresh Ramasamy, the hotel's General Manager.
